Rephrase: Children who do not eat green vegetables may develop iron-deficiency anemia.

Or rephrase by pluralizing: If children do not eat green vegetables, they may develop iron-deficiency anemia.

Or use “he or she”: If a child does not eat green vegetables, he or she may develop iron-deficiency anemia.
